Apricot Bar Cookies w/AIM Just Carrot® Frosting

Cookie

  • 1/3 cup honey
  • 1/3 cup molasses
  • 1/2 cup oil
  • 1 1/2 cup old fashioned oats
  • 1 cup whole wheat flour
  • 1/2 cup wheat germ
  • 3 Tbsp white flour or soy flour
  • 1/4 tsp salt
  • 1 cup apricots, chopped
  • 1 cup raisins, golden or dark
  • 1/2 cup sunflower seeds or pumpkin seeds
  • 1 tsp orange zest
  • orange juice

Blend together honey, molasses, and oil, whipping or beating with electric mixer. In separate bowl, mix dry ingredients and add to honey mixture. Add apricots, raisins, nuts, zest, and enough orange juice to keep it moist. Spread in greased oblong pan and bake 20 min at 375 degrees. While warm, cut in squares and frost.

Creamy Carrot Frosting

  • 1/2 pkg. low fat cream cheese
  • 2 cup powdered sugar
  • 1/2 tsp vanilla
  • 1 1/2 tsp AIM Just Carrots®

Beat well and spread on cooled cookie.
