Baked Fish w/ AIM BarelyLife® Pesto

Baked Fish

  • 4 fillets of white fish (cod, halibut, snapper, sole)
  • 3 Tbsp AIM BarleyLife® Pesto
  • 1 Tbsp lime juice
  • 1/4 cup mayonnaise

Butter casserole pan and place fish in it. Spread a mixture of pesto, mayo, and lime juice on top. Cook at 400 degrees for 15 minutes or until fish flakes.

AIM BarleyLife® Pesto

  • 1 Tbsp olive oil
  • 4 gloves garlic
  • 2 Tbsp parmesan cheese
  • 1 Tbsp pine nuts, walnuts, or sunflower seeds  
  • 3 tsp AIM BarleyLife®
  • 3 tsp chopped fresh basil
  • 1 tsp lemon juice
  • 1/8 tsp coarse grind pepper
