Cranberry-Orange Fiberblend Muffins

  • 1 egg
  • 3/4 cup milk
  • 1/2 cup vegetable oil
  • 2 cups all purpose or whole wheat flour
  • 1/3 cup sugar
  • 3 tsp baking powder
  • 1 tsp salt Ā 
  • 1 cup cranberry halves or dry cranberries
  • 1 Tbsp grated orange peel
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 1/3 cup Unflavored AIM Herbal FiberblendĀ®

Blend dry ingredients. Add milk, egg, and oil. Mix and spoon into muffin tin. Bake at 375 degrees for 20 minutes.
