- 1 egg
- 3/4 cup milk
- 1/2 cup vegetable oil
- 2 cups all purpose or whole wheat flour
- 1/3 cup sugar
- 3 tsp baking powder
- 1 tsp salt Ā
- 1 cup cranberry halves or dry cranberries
- 1 Tbsp grated orange peel
- 1/2 tsp cinnamon
- 1 tsp vanilla
- 1/3 cup Unflavored AIM Herbal FiberblendĀ®
Blend dry ingredients. Add milk, egg, and oil. Mix and spoon into muffin tin. Bake at 375 degrees for 20 minutes.
